"ב 22.12.2017 ,נכנס לתוק, תקן חדש ומעודכן לשמן זית בישראל- ת"י 191.
החידושים העיקריים בתקן השמן החדש הם:
ישראל היא מדינה אידיאלית לגידול זיתים, יש בארץ תרבות עשירה של גידול והחקלאים מתפתחים ומשתפרים כל הזמן בדרכי הגידול, מיקסום התוצרת, במסיק ובהפקת השמן בבבית הבד.
סיפורו של שמן זית הישראלי קשור גם בכלכלה המקומית- כדי להוריד מחירים בשוק, נפתח השוק ליבוא,
אך בעוד שבאיחוד האירופי ובמדינות נוספות בעולם, נחשב גידול הזית כענף מורשת ולכן מסובסד על ידי המדינה ( לדוגמא: חקלאי ספרדי מקבל סובסידיה על עצם היותו מגדל זיתים, המדינה תומכת בו בזמנים בהם יבול ה פרי נמוך ותומכת בו בדרכים נוספות), בישראל אין תמיכה כלל בחקלאות המקומית.
היבואנים שנכנסו לשוק שמן הזית הם חברות מזון גדולות ששולטת על השוק, ויכולות להוריד מחירים כיוון שהן מייבאות כמות גדולה מאד ומציפות את השוק. בשל חוקים של שמירה על השמן האיכוי בתוך מדינות המקור- השמן המיובא מאירופה וממקומות אחרים, אינו מפוקח ובדרך כלל מייבאים לארץ שמן שאינו איכותי. כך נוצר מצב של פגיעה אנושה בחקלאות המקומית, מצד אחד חוסר תמיכה ממשלתית והעדר סובסידיות ומצד שני תחרות מול בעלי הון שלא ניתן להתמודד מולם.
